Porcini mushrooms on the grill, also known as autumn boletes, are a true forest delicacy with a rich aroma and meaty texture. They develop a beautiful char on the grill while remaining juicy in the oven. Ingredients for porcini mushrooms on the grill (serves 4)
- 500 g fresh porcini mushrooms
- salt
- pepper
- fresh thyme
- olive oil
Method
1Clean the porcini mushrooms with a vegetable brush or a mushroom knife. Never wash them with water, as they will absorb moisture and lose their texture.
2Slice the cleaned mushrooms. If youโre grilling them, donโt brush them with oil. If pan-frying, lightly oil them first.
3Grill for a few minutes on one side, then flip and cook on the other until golden brown.
4Transfer the cooked mushrooms to a serving platter, sprinkle with salt, pepper and fresh thyme, and drizzle with olive oil.
5If baking in the oven, preheat it to 220 ยฐC (428 ยฐF) and place the mushrooms directly on the rack. Bake for 4โ5 minutes, then season with salt and pepper and serve immediately.
