  • 150 ml of thick tomato puree (passata)
  • 100 ml of clear broth (or water with a ladleful of homemade broth)
  • 3 tablespoons of extra virgin olive oil
  • 1 teaspoon ground sweet red pepper and a pinch of hot pepper (optional)
  • 1 bunch of fresh parsley, 1 teaspoon of marjoram, salt, and freshly ground pepper

For a velvety béchamel sauce and topping

  • 100 g butter and 100 g all-purpose flour (a 1:1 ratio for ideal thickening—the so-called French roux)
  • 1.2 liters of warm milk (warm milk prevents lumps from forming)
  • 1 level teaspoon of salt, 1/2 teaspoon of pepper, and a generous pinch of freshly grated nutmeg
  • 200 ml tomato sauce (to pour over the rolled crepes before adding the béchamel)
  • 150 g of semi-hard cheese that melts well (Edam, Gouda, or mozzarella—for a golden crust on top)

Preparation Process

1. Preparing the pancake batter: In a large bowl, use an electric mixer to beat the eggs and salt until frothy. Alternately and gradually add the milk, flour, and finally the mineral water and oil. Mix until you have a smooth, runny batter with no lumps. Be sure to let the batter rest at room temperature for about 30 minutes (the starch needs to swell so the pancakes won’t tear while cooking and flipping).

2.Cooking a Rich Meat Ragù: Heat the olive oil in a wide pot. Add finely chopped onion, season lightly with salt, and sauté slowly for 10 minutes until completely translucent (if necessary, add a spoonful of broth to prevent burning). Add the mixed ground meat and minced garlic, along with all the spices (sweet and hot paprika, marjoram, and pepper). Stir over medium heat until the meat loses its red color and the liquid has partially evaporated (about 15 minutes).
