Method
1Cook the basmati rice according to the package instructions. Drain and keep covered to rest.
2Heat the oil in a large pan. Add finely chopped onion and garlic and sauté until fragrant. Add the sliced red pepper and cook for a few more minutes.
3Add the shrimp along with curry powder, turmeric, chili, black pepper and chopped herbs. Cook for about 10 minutes, until the shrimp turn pink.
4Pour in the coconut milk, stir well and let simmer for another 5–10 minutes until the sauce thickens slightly. Season with salt.
5Serve the shrimp curry with basmati rice, sprinkle with fresh herbs and finish with a squeeze of lime juice.
