Lemon sorbet with sparkling wine (Sgroppino)—refreshing elegance in a glass —is a sophisticated drink that originated in Venice and serves as the perfect “palate cleanser” between courses or as a refreshing dessert after dinner. The combination of the lemon’s tartness, the sorbet’s creamy texture, and the sparkling wine’s bubbles creates a harmony of flavors that delights at every celebration—from birthdays to New Year’s Eve. It’s easy to make, and the result looks and tastes just like something from the finest restaurant.

Ingredients for Lemon Sorbet with Sparkling Wine (serves 6–8)

For homemade lemon sorbet:

  • 250 ml of water
  • 160 g white sugar
  • 250 ml of freshly squeezed lemon juice (about 4–5 lemons)
  • grated zest of 1 organic lemon (yellow part only)

To prepare the drink:

  • prepared lemon sorbet
  • 1.2 dl of vodka (chilled)
  • 750 ml of sparkling wine or Prosecco (well-chilled; we recommend “brut” or “extra dry”)
  • fresh mint leaves and lemon slices for garnish

Method

1First, prepare the syrup for the sorbet. In a saucepan, combine the water and sugar. Heat over medium heat, stirring just long enough for the sugar to dissolve completely. Let the syrup boil for 1–2 minutes, then remove it from the heat and let it cool completely.

2. Add freshly squeezed lemon juice and finely grated lemon zest to the cooled sugar syrup. Stir well to blend the flavors.

3Strain the liquid through a fine-mesh sieve into a wider, shallow container (suitable for freezing) to remove pieces of peel and any pulp. This will make the sorbet smoother.

4Place the bowl in the freezer. The key to making a good sorbet without a sorbet maker is stirring: every 45–60 minutes, take the bowl out of the freezer and stir the mixture vigorously with a fork or whisk to break up the ice crystals. Repeat this process at least 3 to 4 times, until the mixture is firm but still smooth.

5Preparing the drink: Chill the champagne glasses well in advance. Place 1 to 2 generous scoops of lemon sorbet in each glass.

6Pour about 0.2 dl of vodka (one tablespoon) over the sorbet. Using a long spoon or whisk, quickly but gently stir the sorbet and vodka together to create a creamy base.

7Slowly pour in the chilled sparkling wine. The drink will foam up, so pour carefully. Use a spoon to gently stir the mixture from the bottom once more to blend the flavors.

8Garnish with a fresh mint leaf and a thin slice of lemon, and serve immediately while the drink is still ice-cold.

Tips for Making the Perfect Lemon Sorbet with Sparkling Wine

• For the most professional result, place the sorbet and vodka in a large bowl and quickly whisk them together until you have a smooth cream without any ice crystals. Spoon this cream into glasses and then top with sparkling wine.
• Replace the sparkling wine with mineral water or Sprite, and simply leave out the vodka. That way, even the kids will be able to enjoy the dessert, since there won’t be any alcohol in it.
• If you’re short on time, you can use a high-quality store-bought lemon sorbet (water-based ice cream).
• Make sure all the ingredients (including the vodka and sparkling wine) and the glasses are well chilled, as the sorbet will melt too quickly if it comes into contact with a warm liquid.

Of course. The sorbet can stay in the freezer for several days. If it becomes too hard, take it out 10–15 minutes before preparing the drink so it softens a bit and is easier to scoop.
