Elderflower syrup with strawberries is a refreshing homemade drink that combines the distinctive aroma of elderflower blossoms with the gentle sweetness of strawberries. The result is a wonderfully fragrant syrup that will delight you with every sip. It’s perfect for preparing summer drinks or as a base for cocktails and desserts.

Ingredients for elderflower syrup with strawberries

  • 30 elderflower blossoms (unwashed)
  • 3 kg sugar
  • 500 g strawberries
  • 50 g citric acid
  • 2 lemons
  • 3 litres of water

Method

1In a large pot, bring 3 litres of water to a boil, then let it cool to room temperature

2Wash the strawberries and cut them into small pieces. Slice the lemons into rounds.

3In the cooled water, add the elderflower blossoms (unwashed, to keep the pollen), chopped strawberries and lemon slices. Cover the pot and leave it to stand for 24 hours, stirring occasionally.

4The next day, strain the liquid through gauze or a fine sieve to remove the blossoms and fruit.

5Add sugar and citric acid to the strained liquid. Stir occasionally and wait until the sugar has completely dissolved.

6Heat the syrup to about 70 °C to pasteurise it, but do not boil.

7Pour the hot syrup into sterilised bottles, close them well and store in a cool, dark place. Prepared this way, the syrup will last for several months.

Tips for the perfect elderflower syrup with strawberries

• For the most intense aroma, use elderflower blossoms picked on a dry, sunny day.
• You can replace the strawberries with raspberries for a different flavour profile.
• Before serving, dilute the syrup with still or sparkling water and add a few ice cubes.
• If you prefer a more tangy syrup, increase the amount of lemon or add a little lemon juice.

Why don’t we wash the elderflower blossoms?

Can I use frozen strawberries?

Yes, you can. Defrost the strawberries first and drain off any excess liquid, then use them following the same procedure as with fresh ones.
