This is the perfect choice when you want to treat your taste buds to local flavors while preparing something special without too much work. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Ingredients for Istrian fu\u017ei with truffle sauce (Serves 4)<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>200 g plain white flour<\/li>\n\n\n\n<li>2 eggs<\/li>\n\n\n\n<li>1 teaspoon extra virgin olive oil<\/li>\n\n\n\n<li>80 g hard cheese (e.g., parmesan)<\/li>\n\n\n\n<li>300 ml pasta cooking water<\/li>\n\n\n\n<li>40 g truffle paste (can be black, depending on available truffles)<\/li>\n\n\n\n<li>1 garlic clove, minced<\/li>\n\n\n\n<li>1 tablespoon butter<\/li>\n\n\n\n<li>olive oil<\/li>\n\n\n\n<li>salt<\/li>\n\n\n\n<li>pepper<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Method<\/strong><\/h2>\n\n\n\n<p class=\"dropcapp4\">1 Make the fu\u017ei dough from flour and eggs, start without oil, you can add it later if the dough is too dry. Knead the dough well until smooth, cover and let rest for at least 30 minutes. <\/p>\n\n\n\n<p class=\"dropcapp4\">2 After resting, divide the dough into several pieces, roll each piece very thin (preferably with a pasta machine). Then cut into squares, approximately 4\u00d74 cm. Shape each square into a fu\u017e \u2013 fold opposite corners toward the center and press lightly so they stick together.  <\/p>\n\n\n\n<p class=\"dropcapp4\">3 In a large pot, bring salted water to a boil and cook the fu\u017ei al dente (about 3\u20134 minutes, when they float). Reserve ~300 ml of the pasta cooking water. <\/p>\n\n\n\n<p class=\"dropcapp4\">4 In a pan, heat olive oil and butter. Add minced garlic and saut\u00e9 over low heat until fragrant (don&#8217;t let it burn). <\/p>\n\n\n\n<p class=\"dropcapp4\">5 Pour in the reserved pasta water and let it boil. Cook for a few minutes until the sauce thickens slightly. Then reduce heat to minimum and add the cooked fu\u017ei. Stir so the pasta is well coated with the sauce.   <\/p>\n\n\n\n<p class=\"dropcapp4\">6 Add parmesan and truffle paste, slowly mix until the cheese melts and the sauce becomes creamy.
